Abstract: | The study presents the hygiene rules which have to be respect in the bread industry. There stand up the good manufacturing practice rules, the preliminary programs, the training programs and the personnel training. Also, are specified the hygiene rules typical to the means of transport, of deposits and of the sale space for bread and baking products. |
